gnome-main-menu: Menu always show up on MetaLeft (Windows key).

There is no way to prevent the main menu showing up when pressing the Windows key.  Changing the corresponding shortcut with gnome-keybinding-properties does not make any change.

Further, as the event is being consumed it is not possible to use the Windows key for any other key binding.

MetaLeft is the wrong description; it is called LeftMeta or/or Super_L.  Anyway, the key with the wafting Windows flag ;-)

Well, I first assumed it is due to a broken configuration but when you came up with this I reproduced the behavior with a vanilla configuration, too.

I also took a short look at the code and it seems that gnome-panel seems to be involved as it has codepaths which are capable to trigger show_main_window of the main menu.
